Circus Bars, Recreating A Childhood Fave, But With A Twist!

So, I've been in the house for how many days? Idk, I've lost track and quite frankly, you all are right there with me, so we're all in the same space. lol I've taken on so many new hobbies, baking being one of them. You guys remember the little frosted sprinkle animal cookies from childhood? So freaking good, right? I saw this thing on Pinterest that reminded me of them and I had to recreate them. So here's the recipe for my "Circus Bars" and pay attention for a special twist...


Okay, so you're gonna need all of this to make them: A glass baking dish, like 13x9 or something. Honestly you could use a cookie sheet too, either way works. I line the pan with parchment paper because it makes it super easy to get the bars out once they're done cooking, and obviously it's mess free so the cleaning is easy. If you don't have parchment paper, that's cool you can just grease your pan then sprinkle flour over it lightly. Okay, then you need a floppy spatula, a whisk or fork or mixer (whatever's your jam), a couple bowls for mixing, and measuring cups.


For the Ingredients:

2 oz Cream Cheese

3 Eggs

1 cup Butter ....Twist!! Make some canna butter with a coconut oil base as a sub here, if you want to spice these up.

1 3/4 cup Sugar

2 1/2 cups Flour

1/2 tsp Baking Powder

1 tsp Salt

1 tsp Vanilla

Frosting

Sprinkles


Then here's how the magic happens...

1. Preheat the oven to 350F and get your pan ready (see above)

2. Mix butter and cream however you please, get it pretty creamy.

3. Add sugar slowly until mixture is kinda fluffy.

4. Add 2 eggs, one at a time mixing in between each add, then use just the yolk of the third egg!

5. Add Vanilla

6. Mix the dry ingredients in another bowl and then slowly add to the wet mixture and mix it up.

7. Pour the batter in the pan evenly with the floppy spatula and make sure to scrape the sides of the bowl clean. Bake it until the bars get a little old on the edges but like fluffy in the middle. About 27-30 minutes.

8. I let the bars cool off just at room temp, then add a frosting of choice, literally whatever frosting you want and then sprinkles for dramatic effect. Then refrigerate for storage.
